BUGIS MANDI // STEAMED PANDAN RICE CAKE WITH COCONUT MILK SAUCE

Bugis ini termasuk salah satu jajanan yang pasti saya pilih dari sekian banyak jajanan pasar yang ada. Adonannya yang kenyal-kenyal, isiannya yang manis dan renyah, juga saus santannya yang gurih. Hmmm.. selalu enak. Sebenarnya rasanya mirip dengan klepon, tapi karena ada sausnya itu jadi rasanya lebih enak. Bungkusnya itu sebenarnya bisa pakai pisang (tentu nambah aroma pisang yang sedap) atau plastik. Tapi karena saya lagi nggak punya daun pisang, akhirnya pakai plastik deh.

RESEP BUGIS MANDI

Untuk : 20 buah 

Bahan-bahan :
Isian
35g gula merah
25g gula pasir
1/2 sdt garam
50ml air
1 daun pandan
90g kelapa parut
1 sdm tepung ketan (campur dengan 1 sdm air)

Adonan kulit
185g tepung ketan
1/2 sdt garam
1/2 sdt pasta pandan
150ml santan cair (saya : 40ml santan instan + 110ml air)
1 1/2 sdm minyak goreng

Saus santan 
275ml santan kental (saya : 175ml santan instan + 100ml air)
1/2sdt garam
1 sdm tepung beras
1 daun pandan

This Bugis is one of the snacks that I definitely choose from the so many 'jajanan pasar' (traditional indonesian snacks). The dough is chewy, the filling is sweet and crunchy, and the coconut milk is giving a savory flavor. Hmmm ... always delicious. Actually it taste similar to klepon, but there's a sauce in Bugis that makes it tastes better. Actually you can use banana leaf (of course it's adding an aroma) or plastic as a food wrapper. But because I don't have a banana leaf, so finally I use plastic.

BUGIS MANDI RECIPE (Steamed pandan glutinous rice cake with coconut palm sugar filling ang coconut milk sauce)

Makes about : 20 pieces

Ingredients :
The filling
1.2oz palm sugar
1/8 cup granulated sugar
1/2 tsp salt
50ml (3 tbsp) water
1 pandan leaf
90g (3.2oz) grated coconut
1 tbsp glutinous rice flour (mix with 1 tbsp water)

The wrapper dough
185g (1 1/2cup) glutinous rice flour
1/2 tsp salt
1/2 tsp pandan essence
150ml (1/2cup + 2tbsp) coconut milk (me : 40ml instant coconut cream + 110 ml water)
1 1/2 tbsp cooking oil

Coconut milk sauce
275ml (1 1/8 cup) creamy coconut milk (me : 175ml coconut cream + 100ml water)
1/2tsp salt
1 tbsp rice flour
1 pandan leaf
