PIE BUAH SEGERRR UKURAN SEDANG // FRUIT TARTLETS RECIPE

Pie buah atau fruit tart adalah satu dessert yang saya sukaaa banget. Saya inget pertama kali makan pie ini tuh di Tizi Restaurant Bandung. Waduuuhhh enaknya bangettt. Pienya itu bentuknya nggak bulet tapi persegi panjang. Pastrynya crumbly dan ada rasa nuttynya (mungkin pake almond bubuk di dalemnya), terus creamnya itu creamy dan buahnya segerrr. Tiap kesana pasti pesen itu. Dan kali ini saya mau bikin sendiri tapi kulitnya pake shortcrust pastry aja yah 😁 sejauh ini, jenis pastry ini sih yang paling cocok. Kalo resep pie crust (pate brisee) seringnya gagal, kagak flaky jadinya. Kalo pate sablee susah diroll, crack dimana2, kalo diteken langsung ke pan jadinya ketebelan 😂 jadi pake ini aja deh. pastry creamnya sih pake yang sama yg kaya yang udah2. 1 resep ini bisa jadi 6 tartlets ukuran 12 cm. Masukin kulkas dulu lebih enak 😊

RESEP PIE BUAH
Untuk : 6 tartlets dengan loyang 12 cm

Bahan-bahan :
(*Saya juga tuliskan konversi gram-cup dengan catatan : sendok yang saya pakai adalah sendok takar. cup yang saya pakai adalah cup 240 ml. 1 cup=16 sdm. 1 sdm=3 sdt)

KULIT PASTRY
200g tepung terigu
1/8 sdt garam
1 sdm gula bubuk
100g mentega, dingin
1 kuning telur
2 sdm air dingin

VLA
100g gula
30g (4sdm) tepung maizena
360ml susu
4 kuning telur
30g (2sdm) mentega
1/2 sdt pasta vanilla

OLESAN BUAH
1 sdt selai aprikot
1/3 sdt air

Topping buah sesuai selera

Fruit tart is one of my favorite dessert. I remember the first time I tried this tart at Tizi Restaurant Bandung. Woooow it's sooo yummy. It doesn't have a round shape but rectangular. The pastry crust is so crumbly and there's a nutty flavor (maybe they use a ground almond in it), the cream is so creamy and the fruit is so fresh. I always order that everytime I went there. And this time, I want to make it at home. I use a shortcrust pastry as a crust 😁 So far, this is the best crust for me. I already tried a pie crust (pate brisee) recipe but oftenly failed, not flaky at all. And if I use pate sablee dough, it's so hard to roll, there's a crack everywhere, if I press directly to the pan, it will be too thick 😂 so I will stick with shortcrust pastry. The pastry cream I use in this recipe is the same recipe like I used before. 1 recipe can makes about 6 4.5inch tartlets. It will taste better if you put it in the fridge first before you serve 😊

FRUIT TARTLETS RECIPE
Makes about : 6 tartlets in 4.5inch pan

Ingredients :
(*I also wrote the gram-cup conversion with some notes : the spoon that I used is a measuring spoon. The cup that I used is a 240ml cup.  1 cup=16 tbsp. 1 sdm=3 tsp)

PASTRY CRUST
200g (1 1/2cup) all purpose flour
1/8 tsp salt
1 tbsp powdered sugar
100g (7 tbsp) cold butter
1 eggyolk
2 tbsp cold water

PASTRY CREAM
100g (1/2 cup) sugar
30g (4tbsp) cornflour
360ml (1 1/2cups) milk
4 egg yolks
30g (2tbsp) butter
1/2 tsp vanilla paste

FRUIT GLAZE
1 tsp apricot jam
1/3 tsp water

Fruit topping of your choice
