Kali ini saya mau bikin tart dengan isian asin. Resep pastry yang dipakai tetep pake resepnya Gemma Stafford karena buat saya paling oke dan serbaguna. Bisa buat pie, tart, quiche dan teksturnya juga pas. Di tengah-tengah antara flaky dan mealy :) Nah buat isianya bisa dipake macem2 tapi yang penting rasio telur : cairan (susu atau cream) adalah 115 : 200. Kalo pengen yang lebih creamy, rasionya bisa pake 1 : 2 dan waktu panggangnya dikurangi. Kalo saya lebih suka yang matang dan kering. Sesuaikan saja dengan selera yaa :)
RESEP CHICKEN AND SMOKED BEEF QUICHE
Untuk : 1 loyang tart 23 cm
Bahan-bahan :
Kulit pastry
200g tepung protein sedang
100g mentega
1 kuning telur
2 sdm air es
1/4 sdt garam
Isian
165g (1 potong) dada ayam fillet (rebus dan potong dadu)
50g (4 lembar) smoked beef (potong kotak)
25g (1/4 buah) bawang bombay ukuran sedang
2 telur
1 kuning telur
1/3 sdt garam + 1/3 sdt merica + 1/8sdt pala
1 sdm kucai
100ml susu
100ml cream
75g keju cheddar parut

This time I want to make a tart with a savory filling. The pastry recipe that I used in this recipe is from Gemma Stafford Channel, because for me, it's the best and most versatile. You can make pies, tarts, quiche and the texture is perfect. It is between flaky and mealy :) Now for the filling, you can fill it with anything but the important thing is the egg and liquid ratio (milk or cream) is 115 : 200. If you want a creamier quiche, the ratio can be 1 : 2 and the baking time is reduced. In my case, I prefer the dry one. Just adjust it to your taste :)
CHICKEN AND SMOKED BEEF QUICHE
Makes about : 1 9 inch tart pan
Ingredients :
200g (1 1/2cup) all purpose flour
100g (7 tbsp) butter
1 eggyolk
2 tbsp ice water
1/4 tsp salt
The Filling
5.8oz (1 piece) chicken breast fillet (boil and dice it)
1.76oz (4 pieces) smoked beef (cut it square)
0.8oz (1/4pc) medium size onion
2 eggs
1 eggyolk
1/3 tsp salt + 1/3 tsp pepper + 1/8 tsp nutmeg
1 tbsp chives
100ml (7 tbsp) milk
100ml (7tbsp) cream
2.6oz grated cheddar cheese
