heloo, mudah2an belom bosen ama pastry cream yak, kali ini bikin makanan olahan pastry cream yang paling umum yaitu choux pastry. sebelumnya saya udah bikin yang crispy / choux au craquelin (https://www.youtube.com/watch?v=cayRlf3Zf8Y), ato yang pake almond luarnya / croquant choux (https://www.youtube.com/watch?v=zRotBcme3bE), ato yang dibikin bentuk donat / crullers (https://www.youtube.com/watch?v=9d8Tp2EinV4).. adonannya semua sama aja.. cuma beda bentuk ama topping dikit :D



KUE SUS

Untuk : 12-13 buah (ukuran sedang)



Bahan-bahan :

(*Saya juga tuliskan konversi gram-cup dengan catatan : sendok yang saya pakai adalah sendok takar. cup/gelas yang saya pakai adalah gelas 240 ml)



Sus dasar

50g (3 1/2 sdm) mentega

120 ml (1/2 gelas) air

1/2 sdt garam

1 sdt gula

75g (9 sdm) tepung protein rendah

2 telur



Pastry Cream (https://www.youtube.com/watch?v=dDAYDpYCZW0) tapi buat 1 1/2x nya, jadi takarannya :

3 kuning telur

300ml (1 1/4 cup) susu cair

15g (2 sdm) tepung maizena

15g (1 3/4 sdm) tepung terigu protein sedang

60 (4 3/4 sdm) gula

23g (1 1/2 sdm) mentega tawar

3/4 sdt pasta vanilla



Chocolate Glaze

120g dark cooking chocolate, cincang

60g (4 1/4 sdm) mentega tawar

CHOUX PASTRY RECIPE

Makes about : 12-13 pieces (medium size)



Ingredients :

(*I also wrote the gram-cup conversion with some notes : the spoon that I used is a measuring spoon. The cup that I used is a 240ml cup)



Choux Pastry

50g (3 1/2 tbsp) butter

120 ml (1/2 cup) water

1/2 tsp salt

1 tsp sugar

75g (9 tbsp) cake flour

2 eggs



Pastry Cream (https://www.youtube.com/watch?v=dDAYDpYCZW0) but make it 1 1/2x that recipe, so the measurement will be :

3 egg yolk

300ml (1 1/4 cup) milk

15g (2 sdm) corn flour

15g (1 3/4 sdm) all purpose flour

60 (4 3/4 sdm) sugar

23g (1 1/2 sdm) unsalted butter

3/4 sdt vanilla paste



Chocolate Glaze

120g dark cooking chocolate, chopped

60g (4 1/4 tbsp) unsalted butter
